<p>roscata wine Shop, in north Glendale, is a neighborhood wine shop for the disenchanted Trader Joe wine-buyer, social nomad and local wine enthusiast. Chinato's also great in cocktails: It adds a wonderful complexity when paired with (or used instead of) sweet vermouth. At Ava Gene's, they make a bright and boozy bonded apple brandy cocktail with chinato, lemon, Demerara sugar, and orange bitters, as well as a great stirred number with rye, chinato, and Carpano Antica (rimmed with dehydrated Campari and orange dust). Skip the fancy rim, and they're easy to whip up at home.</p>
<p>Another surprising fact is that wine contains about ten times less sulfites than most dried fruits, which can have levels up to 1000 ppm. So if you regularly eat dried fruit and do not have any adverse reaction you are probably not allergic to sulfites.</p>

<p>Familiar wines that rock my boat are picpoul de pinet, muscadet, albariño, even pinot grigio at a pinch, but in particular I love the tart, almost mouth-puckering tartness of txacoli, the fashionable Basque wine that is flamboyantly poured from a height to accentuate its spritz. Flysch Txakolina 2016 (£14.50 Berry Bros & Rudd; 11% abv) would be fantastic with chargrilled squid and, frankly, would even make dodgy deep-fried calamari rings taste good (it's pronounced chah-kuh-leena”, incidentally).[i]
